Today is February 11, 2009 and I just got home from BLAZE. Today was my second day at my internship site and it went better than my first day. My first day could have gone better but it’s all right. Well to start off, today was a BEAUTIFUL day out. The sun was shining, birds were chirping and the temperature was close to 60 degrees. My internship didn’t start until 4 p.m. so I had the whole day before that time to enjoy the weather. I woke up from a nice sleep, which I don’t get very often, and then got ready. I ran a few errands with my sister and just soaked in the nice weather that I know will not come again for a while. Once 4 p.m. became closer, I headed off to the east side of Providence where a nice little restaurant called BLAZE is located. Once I arrived there, I put my things away and put an apron on.
I started off by Ash handing me the menu and me looking through it. He gave it to me so I could look and also take notes on it. Well today I definitely did a lot of more cooking and hands on things. I also didn’t have to do any dishes because there was a guy who did them all night long which was good. The first thing I did was peel about 5 carrots and then slide each of them through this grater. After Ash realized that they weren’t coming out right, I had to peel about 3 more carrots and then pass them through a bigger and different machine. Besides that I also cooked actual food.
The way that the kitchen works is that when one of the waitresses makes an order, the sheet prints out in the back kitchen. From there Ash or the other chef takes it, looks at it, and then hangs it on my side. When there is something that I was taught how to make, I start on it. The first thing I learned how to make where the three different salads, the Cesar salad, the House salad, and the Grilled Brie salad. Each of this are prepared and made differently, at first and even still I am confused on how to make a Grilled Brie but the more I make it the better I’ll remember everything. Beside the salads, I also learned how to make pizza, Blaze has a few different types of pizzas but they all start off with the dough and garlic oil spread evenly throughout it. After that, each pizza has its own special ingredients. One a pizza is prepared, I out it into the oven and leave it in there fore about 8 minutes. The third dish I made is the Blaze Nacho’s which are nachos, beans, pinto, jalapeƱos, cheese, and chipotle sour cream. That also goes into the oven for about 8 minutes. In addition to those dishes, I also learned how to make French fries, onion rings, sweet potato fries, and fried calamari Blaze style.
Though Ash said it wasn’t really busy because he actually had time to talk to me, I felt as though it was. The restaurant was packed and new orders kept on coming, so yeah, it was busy for me. Overall, I really had fun making all of these dishes and knowing that I made a few customers happy and full. The only downfall is the small size of the kitchen sense it gets really crowded really fast.
